SEA BIRD NEST SALAD & JELLY (San Hu Cao)
It is very benefical to our human body.
It is high in collagen, Iron, Calcium.
It is also high in dietary fibre and helps to prevent constipation.
It also helps to reduce cholestrol.
Type of seaweed (Thick version)
Very high is collagen gel but have very fishy smell.
Good for soup and making cold dessert because it gel up very easily.
It takes at least 4-5 hours to fully expand and need frequent change of water.
Note :
Once it is fully expanded drain away water because if oversoaking the collagen will dissolve in the water and becomes very slimy.
Type of seasweed (thin version)
It is very good for Salad. Very crunchy.
No fishy smell at all but the collagen is not thick enough to gel cold dessert.
Have to use double portion if it is use to make cold dessert.
It only takes 2 hours to fully expand and 2-3times of changing water.
Note : Do not oversoak if not the nutrients will drain away and the water becomes very slimy.
SEA BIRD NEST SALAD
Ingredients :
1 bowl of thin sea bird nest (pre-soak)
2 tbsp cooked corn
some fresh roselle petals (luo shen hua) -
presoak in salted water for 5 mins
1/2 bowl of shredded cucumber
1/2 bowl of shredded carrot
1/4 bowl of shredded young ginger
Salad Dressing
1 tsp salt
2 tbsp light soya sauce
2tbsp sugar
2 tbsp apple cider vinegar
Method:
Prepare the shredded vegetable and soak in cold water for 5-10mins.
Drain well and keep it fridge.
Put all the ingredients into a salad bowl and pour in salad dressing. Mix well. Serve chill.
SEA BIRD NEST JELLY
Ingredients :
50g of thick seabird nest or 100g of thin seabird
160g-200g of small rock sugar
1000ml water
1 bunch of washed pandan leaves OR
roselle - 5 pcs of fresh roselle - wash
Method :
Use a food processor and chopped up the seabird nest. Leave aside.
Bring the water to boil and in pandan leaf or roselle and rock sugar and simmer for 5 -10mins.
Add in the sea birdnest and simmer until dissolved.
Cool and pour into jelly cups.
Keep in the Fridge. Its take around 6-8hours for the natural collagen to set.
