chinese pumpkin pickle



Ingredients :

1/4 local pumpkin
2 tsp light brown sugar
1-2big seedless lime (approx. 3 tbsp juice)
2 tsp salted prunes (huamei)


Method :

1) Peel the pumpkin and slice thinly
2) Juice the lime and in sugar mix well.
3)Pour over the pumpkin and mix well
4) Cut the salted prunes into bits and top over the pumpkin. Mix well.
4) Marinate overnight and serve chill.

p.s. Very refreshing and the taste very much like mango.

Note :
When buying pumpkin choose those that are 1-inch thick in flesh. Easy for slicing.
